Nordic Table Workshop  Swedish Cheesecake

Celebrate the Swedish calendar’s Day of Ostkaka a little early this year! Ostkaka (cheesecake) is a regional specialty, especially in Småland and Hälsingland.

The curd in ostkaka is separated from rick milk using rennet, which curdles the milk and separates the curd from the whey. The curds are then combined with sugar, flour, and flavoring and baked into a cake that is served with berries.

Learn to make ostkaka from scratch and a simple recipe using ricotta. For toppings, make a quick preserve from seasonal fruit.  While the cakes bake,  discuss the history of ostkaka and how cheesecake parties were a popular part of Swedish culture in days gone by.

Menu: a variety of ostkakar and seasonal fruit jam.


Patrice Johnson is a Nordic food geek and meatball historian who loves to give traditional Scandinavian recipes a modern spin.
