Chef Scott Graden of the New Scenic Café on Minnesota’s North Shore will explore the influence of the New Nordic movement on both restaurant and home cooking. From råbiff (Swedish style tartare) to gravadlax, pickled herring to beet carpaccio, students will find these impressive dishes surprisingly accessible for making at home, perfect for entertaining as the seasons turn.
