A chef and IACP award-winning author\, Nichole has much to share about how contemporary Scandinavian cuisine offers a simple\, sustainable\, and satisfying approach to cooking and eating at home. In this book talk\, expect to hear about Nichole’s years of living in Denmark\, running Kantine restaurant in San Francisco\, and her journey to becoming a cookbook author\, as well as a few hints for favorite recipes from the book. \nAdditional information: \n\nA Q&A and opportunity for book signing will follow the discussion.\nGuests may also be interested in an opportunity to cook alongside Nichole in an intimate afternoon workshop.\nNichole Accettola is also the author of Scandinavian from Scratch: A Love Letter to the Baking of Denmark\, Norway and Sweden\, an IACP award winning cookbook.\nScandinavian from Scratch and Scandinavian Everyday are both available from the ASI Museum Store. DESCRIPTION:You might have tasted it alongside a plate of Swedish meatballs-but have you really dug into the many other uses of the lingonberry? Join Kristi Bissell as she demonstrates a number of Nordic-inspired recipes from her blog True North Kitchen featuring one of the Nordic countries’ most important culinary exports. Kristi will discuss possible sources for different lingonberry products available outside of the Nordic countries as well as ways to put these various products to use\, from condiments to beverages to desserts. \nAdditional information:\nAdvanced registration required. \nVirtual class requirements: This is a live virtual class taught over Zoom. Students need a strong internet connection and a device with video capabilities. \nClass structure: This class is designed as a demonstration so students can watch the entire process and ask questions before tackling the dishes at home. The recipe packet will be available for download one week in advance. \nClass recording: Anyone is welcome to register for the class even if they don’t plan to attend live\, as the class is recorded. The recording will be available for all registrants to review one month after class.
