DESCRIPTION:You don’t need to trek into the wilderness to harvest wild edibles—there are options right here in the city! Join Maria Wesserle of Four Season Foraging to explore the urban environment in search of wild foods. The class will focus on easy-to-identify seasonal fruit and nuts\, starting right on ASI’s campus. Participants will also discuss other wild edibles found along the way and the cultural heritage of foraging in Sweden and other Scandinavian countries. \n  \nAdditional information:\n\nAdvanced registration required.\n\n\nThis class heads outside in wet weather\, but in the case of severe weather\, the class will run inside as a lecture.\n\n\n  \nPrerequisites:\n\nPhysical ability: Students should wear clothing appropriate for the weather (rain or shine!) and be prepared to stand for long periods and walk up to 10 city blocks.\nSkill level: Open to all skill levels.\nAges: Suitable for ages 18+\, or 11-17 with an adult. DESCRIPTION:While winter squash is a newer transplant to the Swedish garden\, in recent years it has become an increasingly popular ingredient in both sweet and savory dishes. Join Kristi Bissell as she demonstrates several cozy Nordic-inspired recipes from her blog True North Kitchen\, including a pumpkin rye sweet bread and a butternut squash galette. Students are sure to leave with new ideas and skills for putting this seasonal produce to good use! \nAdditional information:\nAdvanced registration required. \nVirtual class requirements: This is a live virtual class taught over Zoom. Students need a strong internet connection and a device with video capabilities. \nClass structure: This class is designed as a demonstration so students can watch the entire process and ask questions before tackling the dishes at home. In this book talk\, expect to hear about Nichole’s years of living in Denmark\, running Kantine restaurant in San Francisco\, and her journey to becoming a cookbook author\, as well as a few hints for favorite recipes from the book. \nAdditional information: \n\nA Q&A and opportunity for book signing will follow the discussion.\nGuests may also be interested in an opportunity to cook alongside Nichole in an intimate afternoon workshop.\nNichole Accettola is also the author of Scandinavian from Scratch: A Love Letter to the Baking of Denmark\, Norway and Sweden\, an IACP award winning cookbook.\nScandinavian from Scratch and Scandinavian Everyday are both available from the ASI Museum Store.
