Spend the afternoon exploring the rich botanical tradition of oxymels, a sweet and sour medicinal and edible extract made using the summer floral flowers found in both northern and Nordic flowers. This handcrafted botanical method is both an ancient and rising contemporary practice. In the modern day, these herbal extracts serve a variety of uses—and may be added to yogurt, ice cream, dressing, sauces, or even used in creating cocktails and mocktails! Led by herbalist Gigi Risberg Stafne, students will learn some of the history and the art of preparing craft oxymels using seasonal flowers such as chamomile, elderflower, and ox-eye daisy, among others. Floral oxymels are aromatically and visually appealing, and participants will take home the herbal products prepared in class for future use.
