The time when syrener–that is, lilacs–bloom is as much beloved in Sweden as in Minnesota. It tends to happen a little later in Sweden–late May or early June. Jag tycker att doften av syren är världens ljuvligaste. I think the scent of lilacs is the sweetest scent in the world.

From elderflowers to nettles to spruce tips, many Scandinavians make good use of fresh foraged flavors in spring and early summer. Erin will demonstrate a few recipes and discuss some other common seasonal dishes making use of accessible wild ingredients you might be able to find in your backyard or at a local farmers market. Easy to find substitutions will also be discussed so anyone can try these recipes at home.
This is a live virtual class taught over Zoom. Students need a strong internet connection and a device with video capabilities.
This class is designed as a demonstration, so students can watch the entire process and ask questions before tackling the dishes at home at a later date. The recipe packet will be available for download one week in advance and a recording will be shared after class, available for re-viewing for one month.
