Cardamom is often recognized as one of the foundational flavors of Nordic baking, but it is also a beloved spice in other global cuisines. Join Chef Scott Graden of Duluth’s New Scenic Cafe to focus on this elegant and aromatic spice in a meal that captures cardamom in many forms, from a savory tagine to a sweet dessert. As students enjoy a full dinner, lively class discussions will include insight into Chef Scott’s restaurant menus, cooking tricks, and tips for sourcing and working with whole spices.

This is a demonstration-style class and includes a full meal plus a take-home treat from the New Scenic Café. Coffee and tea are provided; additional beverages can be purchased prior to class. Please note this menu will contain nuts, lamb, gluten, and dairy; vegetarian main courses are not available for this course. This class is suitable for ages 18+.
